Description

A vibrant salad with tender tortellini, cherry tomatoes, peppers, and salami, dressed in a zesty Italian dressing.


Ingredients

  • 12 ounces tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped bell peppers (red and green)
  • 1/2 cup red onion, diced
  • 1 cup black olives, sliced
  • 1/2 cup salami, chopped
  • 1/2 cup provolone cheese, cubed
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions; drain and cool.
  2. Combine the cooked tortellini, cherry tomatoes, bell peppers, red onion, black olives, salami, provolone cheese, and fresh basil in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl.
  4. Pour the dressing over the salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad is even better when prepared in advance. Store in an airtight container for up to three days.
