Description

A comforting, creamy soup packed with beans and veggies, perfect for chilly evenings.


Ingredients

Scale
  • 1 can of kidney beans, drained and rinsed
  • 1 can of white beans, drained and rinsed
  • 1 cup of chicken or turkey sausage, sliced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups of vegetable or chicken broth
  • 1 cup of heavy cream
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the sausage slices over medium heat until browned and flavorful.
  2. Add the diced onion, carrots, and celery. Cook until they are softened and aromatic.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the kidney beans, white beans, and broth. Bring to a boil, then reduce heat and simmer for about 15 minutes.
  5. Stir in the heavy cream and cook for an additional 5 minutes until warmed through.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
