Description

A nostalgic and delicious modern twist on enchiladas, these high-protein bowls are perfect for a comforting weeknight dinner.


Ingredients

  • 1 lb cooked chicken breast, shredded
  • 1 cup cottage cheese
  • 1 cup enchilada sauce
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Tortilla chips or tortillas
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Combine the shredded chicken, cottage cheese, black beans, corn, enchilada sauce, cumin, garlic powder, salt, and pepper in a large bowl. Mix well until fully combined.
  2. Layer tortilla chips or tortillas generously on the bottom of a baking dish.
  3. Spoon the chicken mixture over the tortilla base, spreading it out evenly.
  4. Top with shredded cheese and bake at 375°F (190°C) for 25-30 minutes until heated through and the cheese is melted and bubbly.
  5. Garnish with fresh cilantro before serving.

Notes
