Description

Delightful coffin-shaped ice cream sandwiches perfect for Halloween festivities!


Ingredients

Scale
  • 1 cup of all-purpose flour
  • 1/2 cup of unsweetened cocoa powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/2 cup of unsalted butter, softened
  • 1/2 cup of granulated sugar
  • 1/2 cup of brown sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 2 cups of your favorite ice cream (chocolate, vanilla, or mint)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the flour, cocoa powder, baking soda, and salt in a bowl.
  3. Cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  4. Add the egg and vanilla extract, mixing until homogeneous.
  5. Combine the dry ingredients with the wet mixture until just combined.
  6. Shape rounded tablespoons of dough onto the prepared baking sheet, flattening each slightly.
  7. Bake for about 10-12 minutes, until edges are set but centers are soft.
  8. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  9. Assemble sandwiches by scooping ice cream onto one cookie and topping with another cookie.

Notes

Customize flavors with different ice cream and cookie combinations. Store uneaten sandwiches wrapped in parchment paper and in an airtight container in the freezer.
