A delightful and easy pie that forms its own crust while baking, bursting with zesty lemon flavor.
Ingredients

- 1 cup granulated sugar
- ½ cup unsalted butter (melted)
- 4 large eggs
- ½ cup all-purpose flour
- ¼ cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 1 ½ cups whole milk
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9-inch pie dish.
- Combine the sugar, melted butter, eggs, flour, lemon juice, lemon zest, whole milk, vanilla extract, and salt in a blender. Blend until smooth.
- Pour the mixture into the prepared pie dish.
- Bake for 35–40 minutes until the top is golden and the center may jiggle slightly.
- Allow to cool at room temperature and serve chilled or at room temperature.
Notes
For neat slices, use a sharp knife dipped in hot water and wipe it clean between slices. Store leftovers in an airtight container in the fridge for up to 3 days.
