- 1 lb ground beef
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/4 cup almond flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup butter
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the ground beef, minced garlic, Parmesan cheese, egg, almond flour, salt, and black pepper in a large bowl. Mix until well combined; the mixture should feel slightly sticky.
- Form the mixture into meatballs, each about 1-2 inches in diameter, and place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until the meatballs are cooked through and beautifully golden.
- Melt the butter in a skillet over medium heat. Add the cooked meatballs and allow them to cook in the garlic butter for an additional 2-3 minutes, letting all those flavors meld together.
- Garnish with fresh parsley for a pop of color and extra flavor. Serve warm and enjoy every bite!
Notes
Make-ahead: These meatballs can be prepared a day in advance and stored in the refrigerator. They are also freezer friendly.
