Description

Delicious and crispy Keto Zucchini Fries, a healthy twist on a classic snack, perfect for any occasion.


Ingredients

Scale
  • 2 medium zucchini
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying (or cooking spray for baking)

Instructions

  1. Preheat your oven to 425°F (220°C) if baking. Line a baking sheet with parchment paper.
  2. Cut the zucchini into fry-shaped sticks.
  3. Beat the eggs in one bowl. In another bowl, mix the almond flour, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. Dip each zucchini fry in the beaten egg, then coat in the almond flour mixture.
  5. Arrange the zucchini fries on the prepared baking sheet and spray lightly with oil.
  6. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  7. Alternatively, fry in heated oil until golden brown.
  8. Serve hot with a dip or on their own.

Notes

You can slice the zucchini and prepare the coating in advance. Store in the fridge until ready to cook. Store leftovers in an airtight container for up to 3 days.
