These Key Lime Cookies have a soft, tender texture and a refreshing taste that brings sunshine to any season.

- ½ cup unsalted butter, softened
- 1 large egg
- ¾ cup sugar
- ¼ cup light brown sugar
- 1 teaspoon vanilla extract
- 2–3 teaspoons key lime zest
- 1 ¾ cups flour (219g)
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup powdered sugar
- 1 tablespoon key lime juice
- 1 tablespoon milk
- ¼ teaspoon vanilla
- Pinch of salt (optional)
- ½ teaspoon key lime zest (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter, sugar, and light brown sugar together until light and fluffy.
- Add the egg and vanilla extract, mixing until fully incorporated.
- Sprinkle in the key lime zest, and mix until just combined.
- Whisk together the flour, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet ingredients until you have a smooth cookie dough.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes.
- Prepare the glaze while they bake by whisking powdered sugar, key lime juice, milk, and vanilla until smooth.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
- Drizzle the glaze over the cookies and sprinkle with sea salt and extra key lime zest.
Notes
For extra flavor, add shredded coconut, drizzle with melted dark chocolate, or fold in some fresh berries.
