- 1 pound fresh shrimp, peeled and deveined
- 1 cup orzo pasta
- 3 cups fresh spinach
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon lemon zest
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water if needed.
- Sauté garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, taking care not to brown it.
- Add shrimp: Toss in the shrimp and season with salt and pepper. Cook for about 3-4 minutes until the shrimp turn pink and opaque, stirring occasionally.
- Incorporate spinach: Lower the heat and add the fresh spinach, stirring until just wilted.
- Combine: Add the cooked orzo, lemon zest, and lemon juice to the skillet with the shrimp and spinach. Mix everything together thoroughly. If the mixture seems dry, you can add a splash of the reserved pasta water.
- Serve and garnish: Plate the creamy lemon garlic shrimp orzo and garnish with freshly chopped parsley for a pop of color. Enjoy every comforting bite!
Notes
