Description

Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 3 cups fresh spinach
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon lemon zest
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water if needed.
  2. Sauté garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, taking care not to brown it.
  3. Add shrimp: Toss in the shrimp and season with salt and pepper. Cook for about 3-4 minutes until the shrimp turn pink and opaque, stirring occasionally.
  4. Incorporate spinach: Lower the heat and add the fresh spinach, stirring until just wilted.
  5. Combine: Add the cooked orzo, lemon zest, and lemon juice to the skillet with the shrimp and spinach. Mix everything together thoroughly. If the mixture seems dry, you can add a splash of the reserved pasta water.
  6. Serve and garnish: Plate the creamy lemon garlic shrimp orzo and garnish with freshly chopped parsley for a pop of color. Enjoy every comforting bite!

Notes
