- 1 cup quinoa
- 2 cups vegetable broth or water
- 1 can chickpeas, drained and rinsed
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- Combine the rinsed quinoa and vegetable broth (or water) in a saucepan and bring to a gentle boil.
- Reduce the heat, cover, and simmer for 15 minutes or until the quinoa is fluffy and tender.
- Transfer the cooked quinoa to a large bowl.
- Add the chickpeas, lemon juice, lemon zest, olive oil, parsley, and cilantro.
- Toss all the ingredients together until well mixed.
- Adjust the seasoning with salt and pepper if needed.
- Serve warm or at room temperature.
