Description

A creamy and comforting casserole featuring fluffy mashed potatoes, cheddar cheese, and crispy turkey bacon. Perfect for family dinners and potlucks.


Ingredients

  • 2 pounds potatoes
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup crispy turkey bacon, chopped
  • Salt to taste
  • Pepper to taste
  • Green onions for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and dice the potatoes, then boil them in salted water until tender. Drain and let cool slightly.
  3. In a large bowl, mash the potatoes with sour cream, milk, butter, salt, and pepper until creamy.
  4. Stir in half of the cheddar cheese and half of the turkey bacon.
  5. Transfer the mixture to a greased baking dish.
  6. Top with the remaining cheddar cheese and turkey bacon.
  7. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
  8. Garnish with green onions before serving.

Notes

Make-ahead advice: Assemble the casserole up to a day in advance and refrigerate. Can substitute Greek yogurt for sour cream for a lighter option.
