- 2 pounds potatoes
- 1 cup sour cream
- 1/2 cup milk
- 1/2 cup butter
- 1 cup shredded cheddar cheese
- 1/2 cup crispy turkey bacon, chopped
- Salt to taste
- Pepper to taste
- Green onions for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Peel and dice the potatoes, then boil them in salted water until tender. Drain and let cool slightly.
- In a large bowl, mash the potatoes with sour cream, milk, butter, salt, and pepper until creamy.
- Stir in half of the cheddar cheese and half of the turkey bacon.
- Transfer the mixture to a greased baking dish.
- Top with the remaining cheddar cheese and turkey bacon.
- Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
- Garnish with green onions before serving.
Notes
Make-ahead advice: Assemble the casserole up to a day in advance and refrigerate. Can substitute Greek yogurt for sour cream for a lighter option.
