Instructions
- Preheat your oven to 350°F (175°C).
- Wash and cube the red potatoes, then boil them in a pot of salted water until they’re fork-tender. Drain and let them cool slightly.
- In a large mixing bowl, combine the sour cream, half of the shredded cheddar cheese, cooked turkey bacon, green onions, melted butter, salt, and pepper. Gently stir in the boiled potatoes until they are well coated in that creamy mixture.
- Transfer the potato mixture into a greased baking dish, filling it generously.
