Description

A vibrant and comforting Mediterranean shrimp dish cooked in a lemon garlic sauce, perfect for busy weeknight dinners.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1/4 cup chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Now, add the shrimp and cook until they’re pink and opaque, about 3-5 minutes.
  4. Pour in the chicken or vegetable broth, along with the lemon juice and zest.
  5. Season with salt and pepper according to your taste.
  6. Stir all the lovely ingredients together and cook for another minute.
  7. Garnish with freshly chopped parsley and serve immediately.

Notes

Try adding red pepper flakes for some heat or a splash of cream for richness. Leftovers can be stored in an airtight container for up to 2 days.
