Ingredients

  • 1 large onion, diced
  • 1 bell pepper, diced
  • 1 jalapeño, seeds removed and finely chopped (optional)
  • 1 pound ground beef
  • 1 cup chopped fresh poblanos or Anaheim chiles
  • 2 cups shredded cheese (Monterey Jack, Oaxaca, or a melty blend)
  • 4 bolillo rolls or your favorite crusty bread
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Avocado slices (optional)

Instructions

  1. Add the olive oil to a large skillet over medium heat. Once hot, toss in the diced onion and bell pepper. Sauté until they’re tender and fragrant, about 5 minutes.
  2. Include the jalapeño (if using) to the skillet, followed by the ground beef. Cook until the beef is browned, breaking it up into smaller pieces with your spatula. Season with salt and pepper.
  3. Stir in the chopped chiles, allowing their rich smokiness to infuse the beef mixture. Cook for another 3-4 minutes or until everything is well-combined.
  4. Reduce the heat to low and sprinkle in the shredded cheese. Stir until it’s melted and gooey, creating a creamy filling.
  5. Slice the bolillo rolls in half lengthwise. You can toast them lightly if you prefer a crispier base.
  6. Generously fill each roll with the cheesy beef mixture. Top with fresh cilantro and avocado slices.
  7. Serve your sandwiches warm, and enjoy each tender bite.
