Instructions
- Preheat your oven to 325°F (160°C).
- Combine the crushed graham cracker crumbs and melted butter in a medium bowl.
- Press this mixture into the bottom of a 9-inch springform pan.
- Beat the softened cream cheese with the granulated sugar until creamy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
- Pour the cream cheese mixture over the crust, smoothing the top.
- Bake for 50-60 minutes or until set but slightly jiggly.
- Turn off the oven, leaving the cheesecake inside for an hour.
- Cool to room temperature, then refrigerate for at least 4 hours.
- Drizzle with caramel sauce before serving.
