Ingredients

- 2 ripe nectarines, halved and pitted
- 8 ounces of creamy burrata cheese
- 4 ounces of prosciutto, thinly sliced
- 4 cups of arugula (or other leafy greens)
- ¼ cup of balsamic glaze
- 2 tablespoons of olive oil
- Salt and pepper, to taste
- Optional: fresh basil leaves for garnish
Instructions
- Preheat the grill to medium-high.
- Brush the cut sides of the nectarines with olive oil and sprinkle with salt and pepper.
- Place the nectarines cut-side down on the grill and grill for about 4-5 minutes.
- In a large bowl, combine the arugula with a drizzle of olive oil, salt, and pepper, and toss gently.
- Tear the burrata into pieces and scatter over the arugula, layering with grilled nectarines and prosciutto.
- Drizzle with balsamic glaze, then garnish with fresh basil leaves if desired.
- Serve immediately for the best experience.
Notes
You can grill the nectarines a few hours in advance. Store leftovers separately to maintain freshness.
