Description

Chewy cookies sandwiched with a fluffy marshmallow filling, perfect for sharing.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
  4. Combine the flour, baking soda, cinnamon, and salt in another bowl; gradually stir this dry mixture into the creamed mixture until fully incorporated.
  5. Mix in the oats until everything is well combined and golden.
  6. Drop spoonfuls of dough onto ungreased baking sheets, ensuring plenty of space for spreading.
  7. Bake for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool on wire racks.
  8. Beat together the marshmallow fluff and powdered sugar until smooth and creamy.
  9. Spread a layer of the marshmallow frosting on the bottom side of one cookie, then top it with another cookie to create a sandwich.
  10. Repeat until all cookies are used, stacking them lovingly on a platter.

Notes

Chill the dough for 30 minutes for best results. Store in an airtight container for up to a week.
