A cozy family favorite, this One Pot Greek Chicken and Rice combines tender chicken thighs, fluffy rice, and bright lemon and herbs for a comforting meal.

- 4 chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 3 cloves garlic, minced
- 1 lemon, juiced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup diced tomatoes (optional)
- 1/2 cup peas (optional)
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a large pot or skillet over medium heat.
- Season the chicken thighs with salt, pepper, and oregano, then add them to the pot, cooking until browned on both sides.
- Remove the chicken from the pot and set aside.
- Add the garlic to the pot and sauté for about 30 seconds until fragrant.
- Stir in the rice and cook for a minute until slightly toasted.
- Add the chicken broth, lemon juice, and diced tomatoes if using.
- Place the chicken back in the pot.
- Bring to a boil, then reduce the heat, cover, and simmer for about 20 minutes or until the rice is cooked and the chicken is tender.
- If using peas, stir them in during the last few minutes of cooking.
- Fluff the rice with a fork and serve hot.
Notes
Make ahead by marinating the chicken. Store leftovers in an airtight container for up to 3 days.
