Ingredients

  • 1 lemon, zested and juiced
  • 1 cup asparagus, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers.
  2. Add the diced chicken and cook, stirring occasionally, until golden brown and fragrant.
  3. Stir in the orzo, chicken broth, lemon juice, and lemon zest.
  4. Bring the mixture to a gentle boil, then reduce the heat to low.
  5. Let it simmer for about 10 minutes, allowing the orzo to soak in the flavors.
  6. Add the chopped asparagus during the last 3 minutes of cooking.
  7. Season with salt and pepper to taste.
