Ingredients

Scale
  • 2 pounds red potatoes
  • 3 tablespoons olive oil
  • 1.5 cups grated Parmesan cheese (freshly grated for best results)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (or a mix of basil, oregano, and thyme)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the red potatoes by rinsing under cold water, scrubbing gently, patting dry, and cutting into bite-sized pieces.
  3. Mix the olive oil, garlic powder, dried Italian herbs, salt, and black pepper in a large bowl.
  4. Coat the cut potatoes by tossing them in the seasoned oil until evenly covered.
  5. Sprinkle the grated Parmesan cheese over the potatoes and toss gently again.
  6. Roast the potatoes in a single layer on a baking sheet lined with parchment paper for about 30-35 minutes, flipping halfway through.
  7. Serve warm once they are crispy on the outside and tender on the inside.
