- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to the package instructions; drain and let cool.
- In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
- Add the cooled pasta to the vegetable mixture.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper until well combined.
- Pour the dressing over the pasta salad and toss gently to combine all the ingredients.
- Garnish with fresh basil before serving. Enjoy!
