Description

A vibrant pasta salad packed with fresh vegetables and flavors, perfect for summer gatherings or weeknight dinners.


Ingredients

  • 8 oz pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to the package instructions; drain and let cool.
  2. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
  3. Add the cooled pasta to the vegetable mixture.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper until well combined.
  5. Pour the dressing over the pasta salad and toss gently to combine all the ingredients.
  6. Garnish with fresh basil before serving. Enjoy!
