Ingredients

- 8 oz pasta
- 2 cups fresh basil
- 1/4 cup pine nuts
- 1/2 cup grated Parmesan cheese
- 1/2 cup olive oil
- 2 cloves garlic
- Salt and pepper to taste
- 2 chicken breasts
- Olive oil for grilling
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Combine basil, pine nuts, Parmesan cheese, garlic, and a pinch of salt and pepper in a food processor. Blend while slowly adding olive oil until smooth.
- Season the chicken breasts with salt and pepper, and drizzle with olive oil. Grill over medium heat until cooked through, about 6-7 minutes per side.
- Slice the grilled chicken.
- Combine the cooked pasta and pesto in a large bowl, mixing until the pasta is evenly coated.
- Serve topped with sliced chicken and additional Parmesan cheese if desired.
Notes
Make pesto a day in advance for quicker prep. Store leftovers in an airtight container for up to 3 days.
