Description

A comforting, creamy pesto pasta dish topped with tender grilled chicken, perfect for family dinners.


Ingredients

Scale
  • 8 oz pasta
  • 2 cups fresh basil
  • 1/4 cup pine nuts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • 2 cloves garlic
  • Salt and pepper to taste
  • 2 chicken breasts
  • Olive oil for grilling

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Combine basil, pine nuts, Parmesan cheese, garlic, and a pinch of salt and pepper in a food processor. Blend while slowly adding olive oil until smooth.
  3. Season the chicken breasts with salt and pepper, and drizzle with olive oil. Grill over medium heat until cooked through, about 6-7 minutes per side.
  4. Slice the grilled chicken.
  5. Combine the cooked pasta and pesto in a large bowl, mixing until the pasta is evenly coated.
  6. Serve topped with sliced chicken and additional Parmesan cheese if desired.

Notes

Make pesto a day in advance for quicker prep. Store leftovers in an airtight container for up to 3 days.
