Ingredients

  • 1 cup cottage cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the cooked orzo, cherry tomatoes, and spinach to the skillet. Stir until the spinach wilts and everything is heated through, about 2-3 minutes.
  4. Remove from heat and stir in the cottage cheese until well combined. Season with salt and pepper to taste.
