Ingredients

  • 2 cups almond milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt
  • 1 cup toasted pecans
  • Whipped topping for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the rolled oats, pumpkin puree, almond milk, maple syrup, vanilla extract, pumpkin pie spice, and salt in a large bowl. Mix well until fully combined.
  3. Fold in the toasted pecans gently.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Bake for 30-35 minutes, or until set and the top is slightly golden.
  6. Serve warm, drizzled with maple syrup, adorned with additional toasted pecans, a dusting of pumpkin pie spice, and a dollop of whipped topping.
