Ingredients

  • 1 teaspoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, sliced
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 4 small tortillas
  • Optional: Tzatziki sauce for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the shredded chicken and oregano, stirring to combine, and heat until warmed through.
  2. Combine the halved cherry tomatoes, diced cucumber, sliced red onion, crumbled feta cheese, and sliced olives in a bowl. Season with salt and pepper to taste, allowing the ingredients to mingle.
  3. Warm the tortillas in a separate pan or microwave until they’re soft and pliable.
  4. Assemble the tacos by adding the warm chicken mixture to each tortilla, then topping with the fresh vegetable blend.
  5. Serve with tzatziki sauce if desired.
