Description

A comforting one-pot meal of rice and beans with kielbasa, perfect for cozy family dinners.


Ingredients

  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 1 lb kielbasa, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper, and sauté until soft, about 5 minutes.
  3. Stir in minced garlic and sliced kielbasa; cook for another 2-3 minutes until fragrant.
  4. Add rice, black beans, chicken broth, cumin, paprika, salt, and pepper. Stir well.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes, or until the rice is tender and liquid is absorbed.
  6. Fluff the rice with a fork and serve hot.

Notes

Delicious variations include adding lime, more veggies, or cheese for extra flavor.
