- 1 garlic bulb
- 1 teaspoon olive oil
- 1 cup unsalted butter (2 sticks), room temperature
- 3 tablespoons parsley, finely chopped
- 1 tablespoon rosemary, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon lemon juice
- 3 garlic cloves, roasted
Instructions
- Roast the garlic: Preheat your oven to 400°F. Remove excess papery layers from the garlic bulb, cut off the top, drizzle with olive oil, wrap in foil, and bake for 40 minutes.
- Cool and combine: Once the garlic has cooled, place all ingredients in a mixing bowl: softened butter, roasted garlic, parsley, rosemary, salt, pepper, and lemon juice.
- Mash and mix: Use a fork to mash everything together thoroughly until the mixture is smooth and consistent.
- Shape the butter: Transfer the mixed butter to parchment paper and shape it into a tube or rectangle.
- Chill and set: Refrigerate the butter in parchment paper for at least 60 minutes to take shape.
- Serve and enjoy: Slice off pieces as needed and add to bread, pasta, meats, and more!
Notes
This butter can be made up to a week in advance and stored tightly in parchment paper or an airtight container. It can also be frozen for up to 3 months.
