- 2 cups ripe tomatoes, halved
- 4 cloves garlic, whole
- 1 cup ricotta cheese
- Olive oil
- Salt and pepper to taste
- Fresh basil, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Halve the tomatoes and place them on a baking sheet. Drizzle with olive oil, then sprinkle with salt and pepper. Add the whole garlic cloves.
- Roast in the oven for about 20-25 minutes, until the tomatoes are caramelized.
- Cook the pasta according to package instructions until al dente.
- Combine the roasted tomatoes, garlic, cooked pasta, and ricotta cheese in a large bowl. Mix gently.
- Top with fresh basil and a drizzle of olive oil before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of olive oil if needed.
