Description

A comforting pasta dish featuring roasted tomatoes, garlic, and creamy ricotta, perfect for cozy dinners.


Ingredients

  • Pasta of your choice (spaghetti, penne, or fusilli)
  • 2 cups ripe tomatoes, halved
  • 4 cloves garlic, whole
  • 1 cup ricotta cheese
  • Olive oil
  • Salt and pepper to taste
  • Fresh basil, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the tomatoes and place them on a baking sheet. Drizzle with olive oil, then sprinkle with salt and pepper. Add the whole garlic cloves.
  3. Roast in the oven for about 20-25 minutes, until the tomatoes are caramelized.
  4. Cook the pasta according to package instructions until al dente.
  5. Combine the roasted tomatoes, garlic, cooked pasta, and ricotta cheese in a large bowl. Mix gently.
  6. Top with fresh basil and a drizzle of olive oil before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of olive oil if needed.
