  • 1 cup cooked rice

  • 1 cup shredded cheese (e.g., mozzarella or cheddar)
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats, setting the insides aside for later.
  3. Heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sautéing until soft and fragrant.
  4. Add the ground beef to the skillet and cook until browned, then drain any excess fat.
  5. Stir in the diced tomatoes, cooked rice, Italian seasoning, and season with salt and pepper. Cook for another 5 minutes.
  6. Fill the hollowed zucchini boats with the beef mixture, packing it in generously.
  7. Top with shredded cheese.
  8. Bake for 25-30 minutes or until the zucchinis are tender and the cheese is bubbly and golden.
