Ingredients

  • 2 pounds boneless, skinless chicken breasts, sliced into thin strips
  • 3 large bell peppers, sliced
  • 1 large onion or 2 small onions, sliced
  • 15 ounces diced tomatoes or salsa
  • 1/3 cup fajita seasonings
  • Salt & pepper to season the chicken
  • 3/4 cup low-sodium chicken broth (for Instant Pot)
  • Homemade Fajita Seasoning Blend:
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons oregano
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper

Instructions

  1. Season the chicken strips generously with salt and pepper.
  2. Place the seasoned chicken in the slow cooker. Add the sliced bell peppers, onions, and diced tomatoes or salsa.
  3. Sprinkle the homemade fajita seasoning over the top and stir well.
  4. If using the Instant Pot, pour in the low-sodium chicken broth.
  5. Cover and cook on HIGH for 2-3 hours or LOW for 4-6 hours, or use the poultry setting on the Instant Pot for 15 minutes.
  6. Enjoy the aroma that fills your kitchen once cooked and assemble your fajitas!
