Description

Transform your favorite campfire treat into cozy S’mores Cookie Bars, packed with layers of chocolate, fluffy marshmallows, and graham cracker goodness.


Ingredients

  • 1 cup Unsalted butter, softened
  • 1 cup Brown sugar, packed
  • 1/2 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Graham cracker crumbs
  • 1 cup Chocolate chips
  • 1 cup Mini marshmallows
  • To taste: Extra chocolate chips and marshmallows for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper for easy removal.
  2. Cream the softened butter, brown sugar, and granulated sugar together until creamy and light.
  3. Add in the eggs, one at a time, followed by the vanilla extract, until fully combined.
  4. Mix together the all-purpose flour, baking soda, and salt in another bowl. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Fold in the graham cracker crumbs, chocolate chips, and mini marshmallows until evenly distributed throughout the dough.
  6. Spread the batter into your prepared baking pan, pressing it down gently to form an even layer.
  7. Top the batter with extra chocolate chips and mini marshmallows before baking.
  8. Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  9. Cool the cookie bars in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Slice into squares and enjoy!

Notes

For clean slices, use a sharp knife dipped in warm water. Store leftovers in an airtight container at room temperature for up to 3 days.
