Transform your favorite campfire treat into cozy S’mores Cookie Bars, packed with layers of chocolate, fluffy marshmallows, and graham cracker goodness.

- 1 cup Unsalted butter, softened
- 1 cup Brown sugar, packed
- 1/2 cup Granulated sugar
- 2 Large eggs
- 1 teaspoon Vanilla extract
- 2 1/2 cups All-purpose flour
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1 cup Graham cracker crumbs
- 1 cup Chocolate chips
- 1 cup Mini marshmallows
- To taste: Extra chocolate chips and marshmallows for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper for easy removal.
- Cream the softened butter, brown sugar, and granulated sugar together until creamy and light.
- Add in the eggs, one at a time, followed by the vanilla extract, until fully combined.
- Mix together the all-purpose flour, baking soda, and salt in another bowl. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Fold in the graham cracker crumbs, chocolate chips, and mini marshmallows until evenly distributed throughout the dough.
- Spread the batter into your prepared baking pan, pressing it down gently to form an even layer.
- Top the batter with extra chocolate chips and mini marshmallows before baking.
- Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Cool the cookie bars in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Slice into squares and enjoy!
Notes
For clean slices, use a sharp knife dipped in warm water. Store leftovers in an airtight container at room temperature for up to 3 days.
