Description

Soft and chewy cookies bursting with juicy blueberries and creamy white chocolate, perfect for cozy nights.


Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup white chocolate chunks
  • 1/4 cup cream cheese, softened
  • 1/4 cup blueberry jam
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, sugar, and brown sugar until light and fluffy.
  3. Add in the egg and vanilla extract, mixing well until combined.
  4. Whisk together the flour, baking soda, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the blueberries and white chocolate chunks gently, being careful to keep the berries intact.
  6. Take a tablespoon of cookie dough, flatten it slightly, and place a dollop of cream cheese and blueberry jam in the center. Enclose the filling and roll it back into a ball.
  7. Place on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes until the edges are golden, and the centers look set but still soft.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
