- 1 cup fresh blueberries
- 1/2 cup white chocolate chunks
- 1/4 cup cream cheese, softened
- 1/4 cup blueberry jam
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter, sugar, and brown sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing well until combined.
- Whisk together the flour, baking soda, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the blueberries and white chocolate chunks gently, being careful to keep the berries intact.
- Take a tablespoon of cookie dough, flatten it slightly, and place a dollop of cream cheese and blueberry jam in the center. Enclose the filling and roll it back into a ball.
- Place on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are golden, and the centers look set but still soft.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
