Description

A comforting sourdough bread filled with spicy jalapeños and gooey cheddar cheese, perfect for cozy gatherings.


Ingredients

Scale
  • 1 cup water (240g)
  • 1/2 cup sourdough starter (120g)
  • 1 1/2 tsp salt (11g)
  • 3 cups flour (425g)
  • 1 cup jalapeños, chopped
  • 1 cup sharp cheddar cheese, shredded

Instructions

  1. Mix the water and sourdough starter in a large bowl until well blended.
  2. Add the flour and salt gradually to create a shaggy dough.
  3. Rest the dough covered with a damp cloth for 30 minutes.
  4. Stretch and fold the dough three times every 30 minutes.
  5. Incorporate the jalapeños and cheddar on the last stretch and fold.
  6. Rise the dough at room temperature for 4-5 hours until doubled in size.
  7. Prepare the dough for shaping on a floured surface.
  8. Banneton basket prep by lining with a floured tea towel and placing the dough seam side up.
  9. Alternatively, let the dough rise on the counter for 1-2 hours for quick baking.
  10. Preheat the oven to 450°F (232°C) with a Dutch oven inside.
  11. Score the dough and transfer to the hot Dutch oven with parchment paper.
  12. Bake for 20 minutes covered, then 15 more minutes uncovered until golden brown.
  13. Cool completely on a wire rack before slicing.

Store leftovers in an airtight container for up to three days or freeze for up to three months.
