Description

A creamy and delightful Southern macaroni salad, perfect for picnics and gatherings.


Ingredients

  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced celery
  • 1/2 cup diced red onion
  • 1 cup diced bell pepper
  • 1 cup diced pickles or relish
  • 1/2 cup chopped hard-boiled eggs (optional)

Instructions

  1. Begin by cooking the elbow macaroni according to package instructions. Once it’s al dente, drain and set aside to cool completely.
  2. Whisk together mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until fully combined and creamy.
  3. Fold in the cooled macaroni, diced celery, red onion, bell pepper, and pickles. If you’re using hard-boiled eggs, feel free to add those in as well.
  4. Stir everything together until each piece is coated in that luscious dressing.
  5. Cover the bowl with plastic wrap or foil and chill in the refrigerator for at least 120 minutes before serving.

Notes

This salad is ideal for making a day in advance. Add extra mayonnaise if needed before serving.
