- 1 pound elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup diced celery
- 1/2 cup diced red onion
- 1 cup diced bell pepper
- 1 cup diced pickles or relish
- 1/2 cup chopped hard-boiled eggs (optional)
Instructions
- Begin by cooking the elbow macaroni according to package instructions. Once it’s al dente, drain and set aside to cool completely.
- Whisk together mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until fully combined and creamy.
- Fold in the cooled macaroni, diced celery, red onion, bell pepper, and pickles. If you’re using hard-boiled eggs, feel free to add those in as well.
- Stir everything together until each piece is coated in that luscious dressing.
- Cover the bowl with plastic wrap or foil and chill in the refrigerator for at least 120 minutes before serving.
Notes
This salad is ideal for making a day in advance. Add extra mayonnaise if needed before serving.
