  • 1/4 teaspoon salt
  • 1/2 cup sour cream (or yogurt)
  • 1 cup blueberries (fresh or frozen)
  • 1 tablespoon white sugar for topping (optional)

Instructions

  1. Preheat your oven to 375ºF and optionally grease your muffin tin.
  2. Combine the sugar, egg, vegetable oil (or melted butter), milk, and vanilla extract in a mixing bowl; stir until well blended.
  3. Add the all-purpose flour, baking powder, and salt, mixing gently to combine.
  4. Stir in the sour cream until evenly distributed.
  5. Fold in the blueberries, reserving some for topping if desired.
  6. Distribute the batter into muffin cups, filling each to the top and adding reserved blueberries if using.
  7. Bake for around 25 minutes, adjusting time if using frozen blueberries, until a toothpick inserted comes out clean.
  8. Store muffins in an airtight container while warm to maintain moisture.
