Description

Delightful quesadillas filled with BBQ chicken, gooey cheese, and a kick of hot honey, perfect for easy weeknight dinners.


Ingredients

  • Cooking oil of choice
  • 1 pound boneless, skinless chicken thighs (or chicken breasts)
  • Kosher salt
  • Pepper
  • BBQ seasoning blend
  • 3 tablespoons BBQ sauce (plus more to drizzle in quesadillas)
  • 2 tablespoons hot honey (plus more to drizzle in quesadillas)
  • 4 large burrito-size flour tortillas
  • 3 cups shredded cheese of choice
  • 1/2 cup chopped cilantro (optional)
  • Optional toppings: sour cream, jalapenos

Instructions

  1. Preheat your griddle to medium heat. Add a drizzle of your favorite cooking oil.
  2. Toss in the chicken thighs (or breasts) along with a pinch of kosher salt, black pepper, and BBQ seasoning. Cook for about 6 minutes, mixing occasionally with spatulas, until the chicken is tender and fully cooked.
  3. Add in 3 tablespoons of BBQ sauce and 2 tablespoons of hot honey. Stir well and cook for an additional 2 minutes, allowing those flavors to meld beautifully.
  4. Remove the chicken mixture from the griddle and scrape it clean. Lower the heat to medium-low.
  5. Add a little more cooking oil to the griddle and place the tortillas flat on the surface. Sprinkle half of the cheese on one side of each tortilla.
  6. On the cheesy side, layer the cooked chicken, drizzle on more BBQ sauce and hot honey, and sprinkle with cilantro if using. Top with the remaining cheese.
  7. Fold the empty side of each tortilla over the filled side and cook for about a minute or two per side, until the cheese is melted and the tortillas are crisped to your liking.
  8. Remove the quesadillas from the griddle and slice them into wedges.
  9. Serve warm, accompanied by sour cream and jalapenos for an extra flavor boost, if desired.
